These fancy cookie discs are super easy to make.
You will need:
white candy wafers or white chocolate
chocolate transfer sheets (a million and one choices at fancy flours)
wax paper
baking tray
1 1/2 inch circle cookie cutter (or larger circle, or any other shape)
good rolled cookie dough (that won't spread)
your favorite frosting
Step One: make your fancy circles
Cut strips of transfer sheet and lay on a wax paper lined tray. The rough side of the transfer sheet should point to the sky. Melt the chocolate or candy melts. I used candy melts and melted in a Pyrex measuring cup in the microwave (1 1/2 minutes on half power, stirring every 30 seconds, additional time as needed).
Pour a few tablespoons of the melted candy/chocolate on the center of a transfer sheet strip and evenly spread the candy/chocolate to the edges. You will inevitably go over the edges onto the wax paper. I made mine thin, less than 1/8 inch. You want the layer to be thin, but I could have made mine a bit thicker. Let set in the fridge about 2 to 3 minutes until you can lift the transfer sheet without the candy/chocolate bending. this may take a bit longer for chocolate or a thicker spread.
Carefully turn the strips over and peel off the transfer sheet, leaving the imprint on the candy/chocolate. Quickly and carefully use the cutter to cut circles and (again, I use the word "carefully" because these are so fragile) remove the circles from the cutter if they stick. Return to the fridge until ready to use.
Step Two: make your cookies
Using a perfect sugar cookie that doesn't spread (see my tips here on how to keep your cookies in line), cut out and bake cookies using the same cookie cutter you used for the discs.
Step Three: assemble your cookies
Spread a dab of frosting on your cooled cookies, carefully press the printed disc on top. That's it!
Other ideas
You can also make the discs a little thicker and use them on top of cakes and cupcakes.
Use this easy idea in lieu of cookie decorating. For example, use this method for letter cookies.
